Within two to four hours of harvest, shrimp are cleaned, sorted, and flash-frozen aboard processing vessels equipped with blast-freeze technology. This rapid freezing creates tiny ice crystals that preserve cell structure, preventing the mushiness and moisture loss common in slow-frozen seafood.
